Ingredients

  • 1/2 cup butter softened
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1 fresh lemon juice & 1 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1 1/2 cups flour
  • 1/2 cup powdered sugar

Preparation

Step 1

1. Preheat oven to 350F. Grease light color baking sheet with cooking spray.

2.In a large bowl cream butter and sugar together until light and fuffy.

3. Whip in vanilla, egg, lemon zest, and lemon juice.

4. Stir in dry ingredients, except powdered sugar, slowly until just combined.

5. Pour powdered sugar onto a large plate. Roll a heaping tablespoon of dough into a ball and roll in the powdered sugar.

6. Bake for 9-11 minutes or until bottoms begin to brown and cookies look matte(not melty or shiney).

7. Remove and cool for about 3 minutes before transferring to a rack.
