Ribbon Pasta with Lemon

This extremely simple sauce is perfect for fresh pasta, whether homemade or purchased from a specialty store or supermarket. Always use fresh lemons.

Ingredients
- 1 lb tagliolini or other fresh ribbon pasta
- 1 Tbsp butter
- 1/2 cup white wine
- 1/2 cup light cream
- 1/8 tsp paprika
- 1/4 cup grated Parmesan cheese
- grated zest of 1 lemon
- 1 Tbsp fresh lemon juice

Preparation
Step 1
1. Cook the pasta in a large pot of salted boiling water until al dente.
2. Melt half the butter in a frying pan over low heat. Pour in the wine and cook until evaporated. Add the cream and paprika.
3. Drain the pasta and add to the sauce.
4. Stir in the remaining butter, Parmesan, and lemon zest and juice. Toss carefully over high heat to reduce the sauce, if necessary, and serve.
