Ingredients

  • 1/2 c. flour
  • 1/4 tsp. pepper
  • 1 tbsp. paprika
  • 1/4 c. salad oil
  • 1/2 c. chopped carrots
  • 1 tbsp. brown sugar
  • 1/4 tsp. ground ginger
  • 1 1/2 tsp. salt
  • 4 chicken breasts/fillets
  • sliced onions
  • potatoes
  • 1/3 c. frozen orange juice concentrate

Preparation

Step 1

Combine flour, salt, pepper, and paprika in a plastic bag. Add chicken, shake to coat. Reserve 2 tbsp. flour mixture.
Preheat oven to 350 degrees.
In skillet, brown chicken in hot oil. Remove chicken to a casserole dish, add vegetables and potatoes. Blend reserved flour mixture, brown sugar, ginger, and dash of salt into skillet, stir to make a thick paste. Add orange juice concentrate and 3/4 c. of water.
Cook until bubbly; pour over chicken. Cover and bake for 1 1/4 hrs.
