Pumpkin Quiche

Ingredients
- 2 cups pumpkin puree
- 1 Package Morning Star Sausage Patties cooked and crumbled
- 1/4 cup finely chopped onion
- 2 large eggs
- 1 (13 ounce) can evaporated milk
- 2 tablespoons flour
- 1/2 cup grated parmesan cheese
- 1 10-inch pie shell, unbaked - OR - whole grain breadcrumbs

Preparation
Step 1
1. Combine pumpkin, sausage, onion, and eggs.
2. Gradually add evaporated milk.
3. Toss together flour and Parmesan.
4. Fold into pumpkin mixture.
5. Pour into unbaked pie shell
6. Bake at 375 degrees for one hour.
For the unbaked pie shell, I substitute whole grain breadcrumbs. Take some bread and crumble with blender or food processor.
