Ingredients
- 2/3 cup pumpkin puree
- 1/2 cup maple syrup, honey, agave or brown sugar
- 1/2 cup coconut oil, melted
- 6 eggs, whisked
- 2 teaspoon vanilla extract
- 1/2 cup coconut flour
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon powdered ginger
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- pinch of salt
- 1/2 cup mini chocolate chips or nuts of choice (optional)

Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Mix together wet ingredients in a bowl: pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
3. In another bowl, whisk together coconut flour, cinnamon, nutmeg, ground cloves, powdered ginger, baking soda, baking powder, and salt.
4. Pour dry ingredients into wet ingredients and mix well.
5. Fold in chocolate chips.
6. Use an ice cream scoop to scoop batter into 10 muffin cups (silicone works best)
7. Bake for 35-40 minutes
