Ingredients
- 125 g butter chopped
- 2 tsp grated lemon rind
- 1 1/4 cups (275g) castor sugar (superfine sugar)
- 3 eggs
- 1/2 cup (125ml) milk
- 1 1/2 cups (225g) self raising flour
- 1/4 cup (60ml) lemon juice

Preparation
Step 1
Coat 21 cm baba cake pan (bundt) with non stick spray. Combine all ingredients in medium bowl of electric mixer, beat on slow speed until ingredients are combined. Then, beat on medium speed until mixture is smooth and changed in colour. Pour and spread mixture into prepared pan. Bake in moderate oven (180C/350F) about 50 minutes. Turn onto wire rack to cool. Dust cold cake with sifted icing sugar (confectioners/powdered sugar).
