Steamed Date Pudding
- 12 oz. dates
- 1 3/4 cups water
- 4 tsp. baking soda
- 2 cups flour
- 1 tbsp. baking powder
- 1/2 tsp. ginger
- 1 tsp. vanilla
- 1/3 cup butter (room temperature)
- 1 1/3 cups sugar
- 3 eggs
Place dates and water in a saucepan and boil gently for 5 minutes, stirring occasionally. Remove from heat and stir in baking soda. Let stand for 20 minutes.
In a bowl, combine flour, baking powder and ginger with a fork. Cream butter, sugar and vanilla together. Add eggs, one at a time. Beat well. Gradually beat in flour mixture.
Stir in date mixture until well blended. Turn into greased 8" x 8" pan and smooth top. Place pan into a roasting pan filled with enough water to come half way up the sides of the baking pan.
Bake at 350 deg. for 20 minutes. Turn heat to 325 deg. and bake another 35 minutes or until a toothpick comes out clean.
