SWEET POTATO SOUFFLÉ CASSEROLE

Ingredients

  • 2 cups mashed sweet potatoes
  • 1 1/4 cups granulated sugar
  • 2 eggs, beaten
  • 1/2 stick of butter, melted
  • 1 cup milk (1/2 cup if canned sweet potatoes are used)
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon

Preparation

Step 1

Mix all ingredients well and pour into a greased casserole dish. Bake in a 400deg oven for 20 minutes. While this is baking make the topping.

TOPPING:
3/4 cup crushed corn flakes
1/2 cup brown sugar
1/2 cup nuts
1/2 stick butter

Mix above ingredients and spread evenly over baked casserole and return to oven for additional 10 minutes, still at 400deg.
