Carrot Cake

Ingredients
- Frosting:
- 3 C grated raw carrots
- 4 eggs
- 2 C sugar
- 1 1/2 C salad oil
- 1 tsp. vanilla
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 2 C flour
- 1 C chopped walnuts (or pecans)
- 1 C butter, softened
- 8 oz. cream cheese, softened
- 2 tsp. vanilla
- 5 C powdered sugar

Preparation
Step 1
Combine carros, eggs, sugar and oil; beat. Add remaining ingredients; beat. Distribute batter evenly into 3 - 9" greased cake pans.
Bake at 350° for 40-45 minutes. Cool completely before frosting.
-Frosting is enough for between layers as well as entire outside of cake. It can be halved to leave layers exposed and only frost between layers and top of cake.
