  • Drain 1 lb, 4 oz can Dole blue label pineapple chunks reserving 1/2 cup syrup.
  • Combine one package instant French vanilla pudding mix with one cup whipping or sour cream.
  • Beat until thick.
  • Beat in pineapple syrup.
  • Pour into 8" graham cracker pie shell.
  • Spoon drained pineapple chunks over pudding.
  • Glaze with one cup cooled, melted apricot preserves.
