Ingredients

  • 1 cup sifted flour
  • dash of salt
  • 2 Tbsp sugar
  • 2 eggs, separated
  • 1/2 cup milk
  • 2 Tbsp brandy
  • 1 1/2 cups blueberries, rinsed and drained
  • Oil for frying
  • Powdered sugar

Preparation

Step 1

Stir together flour, salt and sugar.

Beat together egg yolks, milk and brandy. Stir in flour mixture just until flour is incorporated.

Beat egg whites until stiff but not dry. Gently fold into batter. Fold in blueberries.

Heat 1 inch oil in large skillet.

Drop batter by spoonfuls into hot oil. Fry until golden brown, about 1 1/2 minutes on each side. Drain on paper towels.

Serve warm, sprinkled with powdered sugar.
