Hot Broccoli Dip with Pita Chips

I first tasted this dip when I was at my friend Angela's house scrapbooking. She was nice enough to share the recipe with me and so I am sharing it with you.

Ingredients

  • 1 cup fresh broccoli florets, chopped (about 6 ounces)
  • 2 tablespoons onion, chopped
  • 2 tablespoons red bell pepper, chopped
  • 1 ounce (1/4 cup) Parmesan cheese, grated
  • 1 garlic clove, pressed
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 cup sour cream (can use fat free)
  • 1/2 cup mayonnaise (can use fat free)
  • 1/8 teaspoon ground black pepper
  • Pita Chips
  • 4 pita bread rounds

Preparation

Step 1

Preheat oven to 375 degrees F. Chop broccoli, onion and bell pepper using a food chopper; place in 1-Qt batter bowl. Grate Parmesan cheese using cheese grater; add 2 tablespoons to vegetable mixture. Press garlic using garlic press and add to vegetables along with remaining ingredients, mixing well. Spoon into mini-baker. Bake 20-25 minutes or until heated through. Sprinkle remaining 2 tablespoons Parmesan cheese over top and surround with pita chips for serving.

Pita Chips
Preheat oven to 400 degrees. Cut pita bread in half using pizza cutter. slice bread open and cut each half into 8 triangles. Cover flat baking stone with bread triangles. Bake 8-10 minutes or until lightly browned and crisp. Yield 64 chips.
