Ingredients
- 2 # red potatoes, unpeeled, cooked and cooled
- 1/3 cup red wine vinegar
- 1/3 cup canola oil
- 3 Tb chopped fresh dill(1 Tb dried)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cucumber- cut in half, sliced
- 1/2 cup green onion chopped
- 4 oz feta

Preparation
Step 1
-Whisk vinegar, oil, dill and S&P .
-Cut cooled potatoes into bite size pieces.
-Pour dressing over potatoes.
-Stir in cucumbers and green onion.
-Add feta and toss to combine.
