Ingredients

  • 2 # red potatoes, unpeeled, cooked and cooled
  • 1/3 cup red wine vinegar
  • 1/3 cup canola oil
  • 3 Tb chopped fresh dill(1 Tb dried)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cucumber- cut in half, sliced
  • 1/2 cup green onion chopped
  • 4 oz feta

Preparation

Step 1

-Whisk vinegar, oil, dill and S&P .
-Cut cooled potatoes into bite size pieces.
-Pour dressing over potatoes.
-Stir in cucumbers and green onion.
-Add feta and toss to combine.
