  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup sour cream
  • 1 16-ounce can solid pack pumpkin
  • 1 egg, slightly beaten
  • 1/3 cup sugar
  • 1 teaspoon pumpkin pie spice
  • 1 cup firmly packed brown sugar
  • 1/3 cup butter
  • 2 teaspoons cinnamon
  • 1 Cup chopped nuts

Step 1

Preheat oven to 325.
In a large bowl cream together ½ cup of butter, ¾cup of sugar, and vanilla.
Add 3 eggs, beating well after each addition.
In a separate bowl combine the flour, baking powder, and baking soda.
Add the dry ingredients to the butter mixture alternately with the sour cream. Spread half of the batter into a 9 x 13-inch pan, spreading to the edges.
Combine the pumpkin, beaten egg, ⅓ cup of sugar, and pumpkin pie spice.
In a separate bowl combine the remaining ingredients.
Sprinkle half of the brown sugar mixture over the batter, and spread the pumpkin mixture over the streusel.
Carefully spread the remaining batter over the pumpkin mixture and sprinkle the remaining streusel over the top.
Bake in a 325° oven for 50 minutes to 1 hour, or until a toothpick inserted in the center comes out clean.
