Ingredients

  • 3 lbs new or fingerling potatoes (halved if large)
  • 1/4 cup olive oil
  • 3 tbsp white wine vinegar
  • 2 tbsp mayo
  • 2 tbsp spicy brown mustard
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 stalks sliced celery
  • 1/4 cup fresh dill

Step 1

Boil 3 lbs new or fingerling potatoes (halved if large) in a large pot of salted water until tender 20-25 min, drain.

Combine 1/4 cup olive olive oil, 3 tbsp white wine vinegar, 2 tablespoons each mayonaise & spicy brown mustard, 1 tsp salt & 1/2 tsp pepper in a large bowl. Add the potatoes & toss to combine. Let sit tossing occasionally until dressing is absorbed 8-10 min. Add 2 sliced stalks celery and 1/4 cup chopped fresh dill & toss to combine
