- 1 lb full fat ricotta cheese
- 1 1/2 C 00 flour
- 1/3 C grated parmesan cheese
- 1 lg egg
- olive oil

Step 1
Mix all. Squeeze through pastry bag, cutting at 1" length into boiling water. Remove AS SOON as they rise to the top.
