  • 2 small pickling cucumbers, peeled, seeded, and diced
  • 1/2 teaspoon salt
  • 2/3 cup low-fat plain yogurt
  • 1/2 teaspoon minced fresh mint leaves
  • 1/2 teaspoon minced fresh dill

Step 1

1.Place the cucumber in a colander, sprinkle with salt, and allow to drain for 15 minutes.
2.Mix the yogurt, mint, and dill in a bowl. Stir in the drained cucumber. Chill at least 30 minutes before serving.
