Lemon Ricotta Cookies

Ingredients
- 15 ounces whole milk ricotta cheese
- 2 sticks unsalted butter, room temperature
- 2 cups sugar
- 2 teaspoons vanilla extract
- 2 eggs
- Pinch of salt
- 4 cups flour
- 1 teaspoon baking soda
- 2 tablespoons fine lemon zest

Preparation
Step 1
Preheat oven to 350F. Grease a cookie sheet.
In a large bowl, combine the ricotta, butter, sugar, vanilla, eggs and salt and mix thoroughly.
Slowly add the flour and baking soda, when combined, add the lemon zest.
Spoon teaspoonfuls onto a cookie sheet.
Bake for 10 minutes, remove from oven and let cool.
