- 1/2 small onion sliced
- 1 pound mushrooms sliced
- 5 zucchini - (to 6) sliced
- 2 tablespoons butter
- Seasonings to taste (Mrs. Dash, Lawry's, or Spike all work great!)
- 1 cup grated or shredded mozzarella cheese
Sauté onions and mushrooms in butter until tender. Add zucchini and cook just until tender -- don't overcook!
Sprinkle with seasoning; stir to mix well and, while still in frying pan, top with mozzarella cheese. When cheese is melted, serve immediately!
