Sautéed Zucchini

  • 1/2 small onion sliced
  • 1 pound mushrooms sliced
  • 5 zucchini - (to 6) sliced
  • 2 tablespoons butter
  • Seasonings to taste (Mrs. Dash, Lawry's, or Spike all work great!)
  • 1 cup grated or shredded mozzarella cheese


Servings 8


Step 1

Sauté onions and mushrooms in butter until tender. Add zucchini and cook just until tender -- don't overcook!

Sprinkle with seasoning; stir to mix well and, while still in frying pan, top with mozzarella cheese. When cheese is melted, serve immediately!

This recipe yields 8 servings; 3.5 carb grams per serving.
