Roasted Asparagus with Gruyere

Ingredients
- 2 lb asparagus spears
- 1 small onion, cut into thin wedges
- 1 small red or yellow pepper, cut into thin strips
- 1 T olive oil
- 1/4 cup shredded gruyere or swiss cheese

Preparation
Step 1
Preheat oven to 400.
Snap asparagus. Wash. Place veggies in jelly roll pan.
Drizzle with oil, toss to coat.
Spread in single layer. Sprinkle with 1/4 t salt and 1/4 t pepper.
Roast uncovered for 20 min.
Put on platter. Sprinkle with cheese.
