Marinated And Grilled Summer Squash

Ingredients
- SUMMER HERB MARINADE:
- 1 pound small summer squash (yellow or crookneck)
- 4 large garlic cloves peeled
- 1/8 teaspoon salt
- 4 tablespoons lemon juice
- 2 tablespoons water
- 4 tablespoons olive oil
- 1 tablespoon fresh oregano leaves
- 2 teaspoons fresh thyme leaves
- 2 tablespoons fresh basil leaves

Step 1
Prepare Summer Herb Marinade: Add all ingredients to the blender. Blend until smooth and refrigerate until needed. (Makes about 3/4 of a cup)
Preheat a gas grill to high, or build a fire in a kettle grill.
Wash and slice squashes lengthwise into quarters or about 1/3-inch-thick slices.
Add marinade to a shallow bowl. Add squash to the bowl and marinate 30 to 60 minutes turning occasionally to mix marinade with squashes.
Add squashes to a vegetable grilling basket and grill 7 to 10 minutes, turning, until squashes are charred but still fork tender.
This recipe yields 4 to 6 servings.
