- 2 Cups self-rising white corn meal (I use Adulah)
- 1.5 cups Buttermilk
- 1 Large Egg
- 1 tbsp bacon grease or vegetable oil; plus more for pan
Preparation time 15mins
Cooking time 45mins
1. Place cast-iron skillet in oven with bacon grease or oil.
2. Pre-heat to 400.
3. In a medium bowl, beat egg; mix in buttermilk and bacon grease (or oil).
4. Add cornmeal to liquids, stir to mix (do not overmix).
5. Let sit 10 minutes to rise.
6. Pour batter into hot skillet & bake until golden brown.
