Orange Bran Streusel Cake

  • 1/4 cup butter
  • 1-1/2 cups bran cereal
  • 1/4 cup sugar
  • 1 pkg. (2 layer size) yellow cake mix
  • 3 eggs
  • 1 tsp. grated orange peel
  • 1 cup orange juice
  • 1/3 cup vegetable oil
  • Orange Sugar Glaze (see recipe below)



Step 1

HEAT over to 350F. Microwave butter in small microwavable bowl on HIGH 30 seconds or until melted. Stir in cereal and sugar; set aside.
BEAT cake mix, eggs, orange peel, orange juice and oil in large bowl with electric mixer on low speed just to moisten. Beat on medium speed 4 minutes. Pour into greased and floured 10" tube pan.
BAKE 20 minutes or until beginning to rise. Sprinkle with cereal mixture. Bake 30 minutes or until done. Cool 15 minutes; remove from pan. Cool on wire rack, drizzle with glaze. Makes 16 servings.

*Orange Sugar Glaze: Mix 1 cup sifted powdered sugar and 1 tbsp. orange juice in small bowl. Stir in additional juice, 1 tsp. at a time, until glaze is smooth and of drizzling consistency.
