Cho-Choo’s Pumpkin Rolls

Ingredients
- Cake:
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 teaspoon lemon juice
- 3/4 cup flour
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1 teaspoon baking powder
- 1/2 teaspoon nutmeg
- Filling:
- 1 cup powdered sugar
- 6 oz cream cheese, softened
- 4 tablespoons margarine
- 1/2 teaspoon vanilla

Preparation
Step 1
1. Beat eggs at high speed for 5 minutes. Add sugar a little at a time.
2. Stir in pumpkin and lemon juice.
3. Mix remaining ingredients and add to pumpkin mixture.
4. Pour into greased and floured 15 1/2 by 13 1/2 inch jelly roll pan (baking sheet works fine).
5. Bake at 375 degrees for 15 minutes.
6. When cake is done, remove from pan to towel sprinkled with powdered sugar. Roll Cake. Cool.
7. Combine all filling ingredients and beat until smooth.
8. When cake has cooled, unroll and spread with filling; roll again.
9. Slice to serve.
