Baked Truffle and Garlic Fries

Ingredients
- 5 Idaho/russet potatoes
- 3 TBSP. white truffle oil
- 2 TBSP. salt
- 1 TBSP. garlic salt
- 3 TBSP. chopped parsley

Preparation
Step 1
1. Preheat oven to 450 degrees.
2. Thinly slice potatoes
3. Soak fries in cold water for 10 minutes to remove starchiness. The water will be a bit cloudy after your first soak.
4. Repeat this step a second time while you prepare your dry ingredients and baking sheet
5. Combine salt and garlic salt in a small bowl
6. Line a baking sheet with waxed paper
7. Rinse fries one last time without soaking. Note: The more times you soak your fries, the fluffier they will be
8. Let dry briefly on a paper towel
9. Spread fries across baking tray so that they don't overlap
10.Drizzle fries with white truffle oil
11.Sprinkle fries with salt mixture(as much as desired for flavor)
12.Bake for 30 minutes or until they
start to turn brown
13.Top with parsley and any additional salt you desire
