Mandarin Orange Salad

Ingredients
- DRESSING:
- 1/2 tsp. salt
- Dash pepper
- 2 T. sugar
- 4 T. vinegar
- 1/2 cup vegetable or canola oil
- Dash of Tabasco sauce
- 1 Tablespoon snipped parsley
- SALAD:
- 1/2 cup sliced almonds
- 3 T. brown sugar
- 1/2 head iceberg lettuce, chopped
- 1 head romaine, torn in small pieces
- 1 cup chopped celery
- 2 scallions, sliced
- 1 (11-oz) can mandarin oranges, drained

Preparation
Step 1
Shake dressing ingredients in tightly covered jar and refrigerate.
Cook almonds and brown sugar over low heat, stirring constantly, until sugar is melted and almonds are coated. Cool and break apart; store at room temperature.
Tear lettuce and romaine. Place lettuce, celery and scallions in plastic bag and refrigerate.
Five min. before serving, pour dressing into bag; add 1 can drained mandarin orange segments. Fasten bag securely and shake until greens and oranges are coated. Put in serving bowl and sprinkle with sugared almonds.
