Ingredients
- vegetable oil spray
- 2 lbs Russet potatoes, cut into 1/4 inch slices
- 3 tbsp olive oil
- salt
- pepper

Preparation
Step 1
Preheat oven to 400 degrees. Lightly coat 2 rimmed baking sheets with cooking spray. Pout potatoes, oil, 1 tbsp salt and the pepper in a large bowl, Toss to combine.
Arrange potato slices on baking sheets so they are not touching. Bake, rotating sheets, until crisp and golden brown, 30 minutes. Let dry on parchment 5 minutes, season with salt.
