Ingredients

  • Cake:
  • 1 pkg. white cake mix
  • 1 20 oz. can crushed pineapple, well drained reserving 1 C liquid
  • 1/3 c oil
  • 3 eggs
  • Topping:
  • 1 4-serving size vanilla instant pudding mix
  • 1 1/2 C cold milk
  • 2 C cool whip
  • 1 C coconut
  • Reserved drained pineapple

Preparation

Step 1

Preheat oven 350 and grease 9 X 13" pan. Combine cake mix, 1 C pineapple, oil and eggs at low speed until moistened, beat 2' at high speed. By hand, stir in 1/2 C reserved pineapple. Pour batter into pan and bake for 30-40". Cool completely.
Combine pudding mix, and milk at low speed just until blended. Fold in topping and spread over cake. Top w/coconut and pineapple. Refrigerate until serving.
