Marmalade - Orange/Mandarin Oranges

This one I came up with myself from the standard way to make marmalade. I made it a little easier and use electric equipment.

Ingredients

  • 8 Oranges ( I have a tree- so I use 4 Naval and 4 Valencia)
  • 16 Mandarin oranges
  • 1 lemon
  • 2 1/2 cups Sugar ( I use splenda & honey, 1 1/4 cup of each.)
  • 2 cups of water ( If the oranges are very juicy, if not add more water)
  • This is a large batch - so I recommend making this into 2 batches.

Preparation

Step 1

Wash all fruit well. Put the jars in the dish washer. They need to be hot & clean.
Lids too.

Fruit - Cut in half & use an electric juicer. This will give you the juice in one bowl and the seeds stay in the juicer. Take the pulp out of the juicer, put it into the juice and set aside. No seeds!!

Now you have the peelings. Remove all the white from the inside of the peeling. Use only 5 or 6 of the fruits peeling. With a very sharp knife slice them into slivers. Very small and thin slivers. You can use a food chopper, but the best way is the hand sliced. In a non-reactive pan, put in the slivers and cover with water, it really does not take 2 cups, just make sure they do not boil dry. Bring to a boil and turn down to simmer, for 30 to 40 minutes. They need to be well done.

While the peelings simmer - in a blender - blend the juice and pulp together. Slowly, so the pulp is chopped fine and the juice is still not completely blended down.


When the peelings are cooked - add the juice/pulp mixture.
Add the sugar or Spelnda/Honey mixture. Cook uncovered for 15 to 20 minutes, or until the mixture thickens and forms a gel. Stir almost constantly during this time and keep the heat low, so it will not burn.

Remove from the heat. Ladle into the hot jars & lids. If you will use it right away, just refrigerate. If not = long term, ladle into jars with lids, not yet tight but almost, then put jar into a boiling water bath, make sure the jars are covered with water. Boil for 10 minutes. Remove tighten the lids and set aside to cool.
