Ingredients
- 1 clove garlic minced
- 3 tbsp butter
- 2 cups cooked rice
- Dash hot pepper sauce
- 1/4 tsp salt
- 1/4 cup southern comfort
- 1/4 cup toased almonds
- 1 7.5oz can tomatoes chopped
- 1/4 tsp dried basil crushed
- 3 onions sliced into 1" lengths
- 3/4 pound large shelled shrimp
- 1/2 lemon juice and zest

Preparation
Step 1
With zester or sharp knife, cut lemon peel into thin strips and set aside. In skillet cook the onions and garlic in the butter till onion is tender and brown. Add shrimp. Continue cooking 2 to 3 minutes or till shrimp are pink. Stir in undrained tomatoes, basil, salt, pepper and hot pepper sauce. Stir over low heat for 2 minutes or till heated through. Stir in almonds.
In separate saucepan heat southern comfort and lemon peel just till warm. On serving platter, arrange shrimp mixture on the rice. Using a long match, ignite the liquor. Pour over shrimp mixture and alow flames to subside.
Serve at once.
