- Prep Time: 15 minutes plus baking time
- Preheat To: 350ºF (180ºC)
- Serving: 36 - 48 bars
- 1 pkg (520 g) golden cake mix
- 1/2 cup (125 mL) butter or margarine, softened
- 1 egg
- 2 cups (500 mL) finely crushed unsalted crackers
- 3 egg yolks
- 1 can (300 mL) Eagle Brand® sweetened condensed milk
- 1/2 cup (125 mL) lemon juice

Preparation
Step 1
Beat together cake mix, butter and 1 egg until well combined (mixture will be crumbly). Stir in cracker crumbs. Reserve 2 cups (500 mL) crumb mixture. Press remaining mixture firmly onto bottom of a parchment paper-lined 15 x10 x 1" (1L) baking pan. Bake in preheated 350ºF (180ºC) oven for 15 minutes. Cool slightly.
2. Whisk egg yolks with Eagle Brand and lemon juice until well combined. Spread evenly over baked crust. Top with reserved crumb mixture.
3. Return pan to oven and bake 20 minutes longer or until set. Cool and cut into bars.
