Curried Pumpkin Soup

This is a wonderful soup that can also be done in a crockpot with minimal effort.

Ingredients
- 1/2 lb fresh mushrooms (any brand - Cremini is my favourite)
- 15 oz can pumpkin
- 1/2 cup onions
- 12 oz can Carnation low fat evaporated milk
- 2 TBSP butter
- 1 TBSP honey
- 2 TBSP all purpose flour
- 1/2 tsp salt
- 1 tsp curry powder (or more depending on your taste)
- 1/4 tsp black pepper
- 3 cups vegetable broth
- 1/4 tsp ground nutmeg

Preparation
Step 1
Melt the margarine over medium heat. Add onions and mushrooms and heat until the onions are transparent. Add the flour, honey, curry powder, salt, black pepper and nutmeg and stir until thickened. Add the vegetable broth and pumpkin and stir until blended. Slowly add the evaporated milk and stir until thickened, about 5 to 10 minutes. Heat through and serve.
