Berry Crisp Spiral Ham

  • 1 8-lb. cooked spiral-sliced ham, liquid reserved
  • 1 cup orange juice
  • 1/2 cup seedless raspberry jam
  • 1 cup fresh raspberries
  • 1/2 cup honey
  • 1 jalapeno chile pepper, stemmed, thinly sliced, and seeded, if desired

Step 1

1. Preheat oven to 325F. Place ham, slices up, on a rack in a shallow roasting pan. Set aside. For berry glaze, in a medium saucepan combine reserved ham liquid, orange juice, jam, berries, honey, and jalapeno. Bring to boiling. Reduce heat. Simmer, uncovered, 15 minutes or until syrupy, stirring occasionally. Brush some of the glaze over ham.
2. Cover ham loosely with foil. Bake 1 hour and 20 minutes or until heated through, brushing occasionally with glaze.
3. Increase oven temperature to 425F. Remove foil from ham. Spoon remaining glaze over top and sides. Bake 10 minutes more or until top of ham is crispy and inner ham is heated through (140F). Remove; let stand 10 minutes before serving. Serve with additional raspberries.
