  • 500 g/1lb 2oz potatoes, cooked and mashed
  • 2 Tbsp chopped fresh parsley
  • 1 tsp chopped fresh sage
  • 2 garlic cloves, crushed
  • 2 Tbsp olive oil, plus extra for greasing
  • salt and freshly ground black pepper

Preparation

Step 1

Preheat the oven to 220C/425F/Gas 7 and lightly grease a baking sheet. Mix the potatoes with the herbs, garlic and two tablespoons of oil, then season with salt and pepper. Shape into four 10cm rounds, flatten the tops and place on the baking sheet. Brush with oil and bake for 15 minutes until crisp and golden.
