Ingredients
- 4 ears of corn
- 2 tsp EVOO
- s & p to taste
- 1 red bell pepper
- 1 yellow bell pepper
- 1-1/2 pints heirloom tomatoes
- 1 small red onion
- 1 bunch basil
- 6 oz. mixed greens
- EVOO & Balsamic to dress

Preparation
Step 1
Roast corn, bell peppers and onion on grill. Cut corn from Cobb, and dice up peppers and onions. Dice tomatoes and add to corn mix, set aside until ready to serve. Place mix over mixed greens, dress lightly w/ EVOO and balsamic vinegar.
