Ingredients

  • 5 pounds potatoes (10-12 potatoes)
  • 1 small onion
  • 4 stalks celery
  • 6 hard boiled eggs
  • 1 1/2 cups sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp celery seed
  • 1 pound bacon
  • 2 Tbs flour
  • 1/2 cup vinegar
  • 1/3 cup water

Preparation

Step 1

1 Boil potatoes with skin on until done. Drain potaotes, peel and cut up.
2 Cut up onion and celery into small pieces. Slice hard boiled eggs. Combine potatoes, onion, celery, eggs, surgar, salt, pepper and celery seed together.
3 Cut bacon into small pieces; fry until crisp. Add flour, vinegar and water into bacon, stirring constantly over lower heat until a thick, creamy texture.
4 Pour bacon dressing over potato mixture and mix thoroughly.
