Texas Bananas Foster French Toast (Z' Tejas)

Ingredients
- French Toast Batter
- 2 cups half & half
- 4 eggs
- 1/2 tsp cinnamon
- 1/2 tbsp vanilla
- Bourbon Ginger Caramel Sauce
- 1 cup bourbon
- 1 cinnamon stick
- 1 cup brown sugar
- 1-1/2 oz fresh ginger
- 1 lb butter (4 sticks)
- Cobbler Crumbs
- 1 cup flour
- 1/2 cup brown sugar
- 1/8 tsp salt
- 1/2 tbsp cinnamon
- 1/2 tbsp nutmeg
- 1/2 lb butter (2 sticks) at room temperature
- Garnish
- 1 tbsp pecans
- powdered sugar for dusting

Preparation
Step 1
Make the batter:
Combine all ingredients in a bowl and whisk to combine.
Make the bourbon sauce:
Heat bourbon, cinnamon, brown sugar and ginger until reduced by half. Slowly whisk in butter. Strain into bowl.
Make the cobbler crumbs:
Mix all dry ingredients in a bowl. Cut butter into cubes and knead into dry ingredients to form crumbs.
Make the french toast:
Place 2 tablespoons of oil in skillet. Dip toast in batter and place in skillet for 3-4 minutes on each side until firm and golden brown. In a separate skillet, add one tablespoon of oil and add banana slices. Saute 3-4 minutes.
Cut toast on angle and stack on plate. Top with bananas, bourbon sauce and sprinkle on crumbs and powder sugar.
