Beef Chili with Kidney Beans

This was my stand-by chili recipe for a number of years and is a solid traditional chili.

Ingredients
- 2 medium onions, chopped
- 1 red bell pepper, cut into 1/2 inch cubes
- 6 cloves garlic, minced
- 1/4 cup chili powder
- 1 tbsp ground cumin
- 2 tbsp ground coriander
- 1 tsp red pepper flakes (optional)
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- 2 pounds extra lean ground / minced beef
- 2 400 g / 16-oz cans red kidney beans, drained and rinsed
- 400 g tin chopped tomatoes
- 400 ml tomato passata
- 1/2 tsp salt

Preparation
Step 1
1) Add all ingredients to a slow cooker.
2) Turn on low and cook 5-8 hours.
3) Can also be made in a dutch oven/ large pan on the stove. Soften vegetables, add beef, then add remaining ingredients and simmer 30 minutes to 1 hour.
