Ingredients

  • 4 ripe tomatoes, sliced
  • 4 tablespoons mayonnaise
  • 4 tablespoons Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 tablespoon garlic
  • sauteed onion
  • salt and pepper to taste
  • 1 teaspoon chopped fresh parsley or basil
  • 1/4 cup shredded mozzarella cheese

Preparation

Step 1

1.Preheat oven to 350 degrees F (175 degrees C).

2.Arrange tomato slices in a single layer in a glass baking dish.

3. Saute chopped oions in butter and garlic.

4 In a small bowl, mix together mayonnaise, parmesan, Dijon mustard, and sauted onions. Season with oregano, and salt and pepper to taste. Use a spoon to top each tomato slice with a small amount of the mayonnaise mixture. Sprinkle with mozzarella , and then top with parsley.

3.Bake in preheated oven for approximately 15 minutes, or until golden brown. Serve immediately.
