Ingredients

  • (2 T butter, 1 T olive oil)
  • 1 lg onion, sliced thin
  • 2 lbs tomatoes, quartered
  • 3 T tomato paste
  • Fresh parsley, chopped
  • (3 T vegetable bullion paste/3 c hot water)
  • (1 -2 t sugar)
  • Heavy cream
  • Lg loaf French bread

Preparation

Step 1

Add butter & olive oil to frying pan and sauté onions. Add
tomatoes and cooked onions to food processer. Process until
very smooth and place into lg stockpot. Add tomato paste and
parsley & bring to boil for apx 2 min. Add vegetable bullion,
water, sugar, and salt & pepper to taste. Reduce heat to med
and simmer for apx 20 min. Serve topped w/ drizzles of heavy
cream if desired.
Heat French bread and serve w/ butter along side soup.
