Ingredients

  • Dressing:
  • 1 can black beans (soup can size), rinsed and drained
  • 1 bag frozen corn (16 oz)
  • 2 cans (small) sliced black olives
  • 1 medium red pepper, diced
  • 1 bunch green onions, chopped
  • 2-3 avacados, chopped
  • 5 cloves garlic, minced
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 tablespoons cider vinegar
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preparation

Step 1

Mix first ingredients with the exception of the avacado. Mix dressing and pour over. Chill and add avacados immediately before serving.
