Ingredients
- Dressing:
- 1 can black beans (soup can size), rinsed and drained
- 1 bag frozen corn (16 oz)
- 2 cans (small) sliced black olives
- 1 medium red pepper, diced
- 1 bunch green onions, chopped
- 2-3 avacados, chopped
- 5 cloves garlic, minced
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice
- 3 tablespoons cider vinegar
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Preparation
Step 1
Mix first ingredients with the exception of the avacado. Mix dressing and pour over. Chill and add avacados immediately before serving.
