Mini Cinnamon Sugar Pumpkin Muffins

- 1 and 3/4 cup whole wheat flour (or all-purpose flour)
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon nutmeg
- 4 tablespoons butter, melted
- 1/2 cup brown sugar
- 1 egg
- 1 egg yolk
- 1 and 1/2 teaspoons vanilla extract
- 3/4 cup pumpkin puree
- 1/2 cup milk
- Cinnamon Sugar Coating
- 3 tablespoons butter, melted
- 1/4 cup white sugar
- 1 tablespoon cinnamon

Step 1
Preheat oven to 350 degrees F.
1) To make muffins, mix the first 6 ingredients together in a large mixing bowl (whole wheat flour through nutmeg). In separate bowl, combine the melted butter, brown sugar, egg and egg yolk, vanilla, pumpkin puree and milk. Add wet mixture all at once to the dry mixture. Stir just until moistened – do not overmix.
2) Prepare mini muffin pan with spray oil. Spoon batter into each muffin cup until they are about 2/3 full. Bake in preheated oven for 12-15 minutes. Muffins will be springy on top and a toothpick inserted in the center will come out clean.
3) Let the muffins sit for a few minutes while you prepare the coating. Melt 3 tablespoons butter in the microwave for 20-30 seconds (or skip this butter part). Combine the 1/4 cup sugar and 1 tablespoon cinnamon in a separate bowl. Remove the muffins from the pan and dip the tops in butter, then roll the whole muffin around in the cinnamon sugar mixture. Easy!
