Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • peel of 1 lemon
  • 1 Tablespoon baking powder
  • juice of 2 lemons, used 1 at a time
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla
  • 1/3 cup sugar ( 1/4 cup if preferred )
  • juice of the 2nd lemon

Step 1

Pre-heat oven to 350 degrees. Grease and flour a 9x5 inch glass loaf pan. Whisk together the flour, 1 cup sugar, lemon peel, and baking powder. In a separate bowl, beat the eggs, milk, juice of 1 lemon, vanilla, and the melted and slightly cooled butter. Combine the two mixtures. Pour batter into the loaf pan, Bake until center-set / clean, about 45 minutes. Towards the end of that time, make the glaze. In a small saucepan, combine the 1/3 ( or 1/4 ) cup sugar with the juice of the 2nd lemon. Dissolve the sugar, stirring, at medium heat, for about 3 minutes. Using a chop-stick or skewer, poke holes in the top of the still-warm bread. Slowly drizzle glaze into the holes, using a spoon. Then baste the entire surface of the loaf with the remaining glaze, making a couple of passes, waiting a bit in between each pass to allow the syrup to soak in. Cool on a rack for at least 20 minutes before serving, to allow the glaze to set.
