This recipe is from Marsha Kimball....had these delicious cakes at the lake, and have made them many times since. Awesome vegetarian recipe!

Ingredients

  • serve with:
  • 3 15-ounce cans black beans - divided
  • 2 large eggs
  • 3 cups panko (japanese bread crumbs) - divided
  • 1 c. chopped red bell pepper
  • 1/2 c. chopped green onions (about 4)
  • 1/2 c. fresh cilantro
  • 2 garlic cloves
  • 2 t chili powder
  • 1 t cumin
  • 1 t salt
  • 1/2 t onion powder
  • 1/2 t ground pepper
  • 4 T oil (for cooking)
  • salsa
  • sour cream
  • avocado slices

Step 1

puree 2 c black beans with eggs in blender until smooth. Transfer to large bowl. Stir in remaining beans, 1 1/4 c panko, and next 10 ingredients. Shape mixture into 8-10 patties.

Coat cakes with remaining panko. Heat oil, add black bean cakes - cook about 3 min per side.

Serve with brown or wild rice, salsa, sour cream, and avocado.
