  • 2 eggs
  • 1 cup milk
  • 1 can cream corn
  • 1 cup cornmeal
  • 1/2 tsp baking soda
  • 8 oz shredded cheddar cheese
  • 1/2 cup oil
  • 1 onion, minced
  • 3-4 jalapenos



Step 1

Preheat oven to 350 degrees

Grease baking pan. In medium saucepan over medium heat add oil. Once hot add onions and cook until translucent, about 5 minutes. Add milk, oil and cheese, cook until cheese is integrated and melted into mixture.

Beat eggs and add to mixture. Mix cornmeal, soda and put all ingredients into a big mixing bowl. Incorporate all ingredients and then pour into greased baking pan and cook for 40-50 minutes, or until you can pull toothpick out without it being wet.
