Ingredients
- Cake:
- 2 cups sugar
- 4 eggs
- 1 1/2 cup oil
- 3 small jars baby food carrots
- 1 tsp vanilla
- 2 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1 small can crushed pineapple, drained
- 1 cup chopped pecans
- Icing:
- 1/2 cup margarine
- 1-8oz pkg cream cheese
- 3 1/2 cups confectioners sugar
- 1 tsp vanilla
- 1 cup chopped walnuts

Preparation
Step 1
Cake:
Mix sugar, eggs, oil, carrots, and vanilla together. Combine dry ingredients and add to creamed mixture. Stir in crushed pineapple and pecans. Pour into greased and floured LARGE cake pan. Bake for 60 minutes at 350 degrees.
Icing:
Combine margarine and cream cheese. Beat until light. Gradually add in confectioners sugar. Add vanilla and chopped walnuts. Spread over cooled cake.
