Ingredients

  • CRUST-
  • 1 cup each of raw almonds and brazil nuts
  • (soaked overnight drained and rinsed)
  • 1/2 cup unsweetened coconut flakes
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon of cinnamon
  • 6-8 dates (Medjool)
  • PIE FILLING-
  • 6-8 peaches into chunks
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice (optional)
  • 1/4 teaspoon grated nutmeg.

Preparation

Step 1

SOAKED NUTS-measure raw almonds and brazil nuts, and place them in a water-filled jar to soak overnight. The next day drain the water and rinse.
CRUST-Place the nuts in a food processor with unsweetened coconut flakes, vanilla, and cinnamon. Process until the consistency of meal, and then add dates to make a dough. Press the dough into a pan to form a crust, and then place it in the freezer to firm up while making filling.
FILLING-Cut peaches into chunks, and mix with cinnamon, lemon juice (optional), and grated nutmeg. (the less sweet the peaches, the more important it is to include the lemon juice.) slide the peach mixture into the crust, and refrigerate.
