Ingredients

  • Cake:
  • 1 1/4 cups oil
  • 2 cups sugar
  • 2 cups flour
  • 4 eggs
  • 3 cups grated carrots
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinamon
  • 1 tsp salt
  • 1 cup nuts
  • Icing:
  • 1/2 stick melted butter
  • 1/4 cup can milk
  • 1/2 tsp vanilla
  • 3/4 cup xxx sugar
  • 1 cup coconut
  • 1 cup pecans

Preparation

Step 1

Cake:
Combine oil and sugar, mix well. Mix dry ingredients, add 1/2 to sugar mixture. Add remaining dry ingredients alternately with eggs mixing well after each addition. Add carrots and pecans, mixing well. Bake in 9x13 (lightly oiled) pan at 325 for 1 hour and 10 min.

Icing:
Combine ingredients and spread on cake, place under broiler until brown.
