Ingredients
- 12 ripe tomatoes, thickly sliced
- 1/4 c chopped green onion
- 1/2 c olive oil
- 1/3 c wine vinegar
- 8 fresh basil leaves or 2 tsp dry
- 1 tsp salt
- 1/2 tsp dry mustard
- 2 cloves crushed garlic
- 1 Tbsp fresh minced parsley
- 1 tsp sugar
- Mozzarella cheese (optional)
- Onion (optional)
Details
Preparation
Step 1
Combine all but optional ingredients in a bowl and marinate at least 4 hours.
Serve on lettuce.
Good with mozzarella cheese coarsely grated and sweet onions in rings. Yields 12 servings.
