Ingredients

  • 12 ripe tomatoes, thickly sliced
  • 1/4 c chopped green onion
  • 1/2 c olive oil
  • 1/3 c wine vinegar
  • 8 fresh basil leaves or 2 tsp dry
  • 1 tsp salt
  • 1/2 tsp dry mustard
  • 2 cloves crushed garlic
  • 1 Tbsp fresh minced parsley
  • 1 tsp sugar
  • Mozzarella cheese (optional)
  • Onion (optional)

Preparation

Step 1

Combine all but optional ingredients in a bowl and marinate at least 4 hours.

Serve on lettuce.

Good with mozzarella cheese coarsely grated and sweet onions in rings. Yields 12 servings.
